The pale, quiet counterpart to the Rum Sunrise, mija. Coconut rum and RumChata gone hush, cream of coconut backing it up, grenadine only for color. It's a cream drink though, dairy shortens its life, so it does not get to sit in the fridge for weeks the way the spirit-and-puree jars do.

How it's made

11. Sanitize the jar

A cream drink spoils faster than a spirit-only jar, so starting from a clean jar matters even more here.

  1. Run a mason jar and its lid through the dishwasher, or wash hot and soapy by hand.
  2. Let it air dry fully before anything gets poured in.

22. Build the batch

RumChata and cream of coconut are dairy-based, not a spirit-and-citrus mix, so this needs a proper hard shake to emulsify or it separates on you before it ever gets to the fridge.

  1. Fill a cocktail shaker with cracked ice.
  2. Add 4 oz Cruzan Coconut Rum, 3 oz RumChata, 2 oz RE'AL Coco Cream of Coconut, and 0.5 oz Rose's Grenadine Syrup.
  3. Shake hard for 12 to 15 seconds.

33. Strain, cap, chill

Dairy splits and sours faster than a spirit-only jar. Alcohol slows that down but doesn't stop it the way it does in a citrus-free, dairy-free batch, so this jar runs on a short clock no matter how clean the build was.

  1. Strain into the prepped jar, leaving headspace at the top.
  2. Cap tight and refrigerate immediately, don't let it sit out.
  3. Label the jar Conjure Cream with the batch date and a use-by 3 to 4 days out.
  4. Use it within 3 to 4 days. Shake well before each pour since it separates a little sitting, and toss it if it smells off before that window is up.

44. Serve

  1. Shake or stir the jar to recombine before pouring.
  2. Fill a rocks glass with fresh ice.
  3. Pour the Conjure Cream over the ice and serve.

Notes

Allergen and restriction clearance: no pineapple, kiwi, tomato, cilantro, or capsaicin anywhere in this build, cleared clean. This is a dairy build, RumChata and cream of coconut both, so anyone with a dairy sensitivity should know before they pour it, and once opened those bottles go in the fridge same as the jar itself. One shaker, one jigger behind this bar: wash and dry both after this batch before they touch a spirit-only jar, dairy trace shortens the next jar's hold. Backbar stock confirmed on hand per bin/well: Cruzan Coconut Rum, RumChata, RE'AL Coco Cream of Coconut, and Rose's Grenadine Syrup are all on the shelf. Full-proof cocktail, not spirit-free, no trace-alcohol note needed. Shelf life once batched: 3 to 4 days refrigerated only, shorter than any spirit-only jar in the book.
