Sazerac, Vieux Carre, Ramos Gin Fizz by inheritance rather than study. Holds that a zero-proof drink is a craft problem, not an apology, and builds it with the same care as anything with a spirit in it. Runs the house bar: what is poured, what is mixed, and what a non-drinker gets instead of a soda water.
