Dark rum poured over ginger beer so it sinks and blooms like a storm cloud, not stirred until the drinker does it. Gosling's owns the name by trademark in Bermuda, so this build uses their rum and their ginger beer on purpose, not just habit.

How it's made

Build it

The rum is denser than the ginger beer, so poured slowly over the back of a spoon or down the inside of the glass it sinks through in a dark cloud instead of mixing flat. That visual is the point of the drink, so it gets built in the glass, not shaken or stirred before it's served.

  1. Fill a highball glass to the top with ice cubes.
  2. Pour the ginger beer over the ice, filling the glass to about an inch from the rim.
  3. Pour the dark rum in slowly over the back of a bar spoon so it sinks through the ginger beer instead of blending in.
  4. Garnish with a lime wedge on the rim. Let the guest stir it themselves at the table, that's part of the drink.
