The second spirit-free drink on this list, and the one built for a firepit and a hot tub and the people standing around them. When in doubt on a zero-proof build, go long and go carbonated, bubbles substitute for a real part of what the alcohol would have been providing, and a four-ounce spirit-free pour in a coupe has nowhere to hide the way this one does in a tall glass over ice. Ginger is doing the job capsaicin would do in a house that could have capsaicin, real bite without any heat that isn't welcome at a shared table. This is the one to hand a kid, a driver, or anybody who just wants something cold and bright and doesn't want to explain why.

How it's made

1Build the ginger syrup and the honey syrup

Honey seizes hard in a cold drink if it isn't thinned first, and fresh ginger simmered rather than muddled raw gives you real, clean heat without the fibrous bite of a shortcut.

  1. Peel and slice 1/2 cup fresh ginger. Simmer with 1 cup water and 1 cup sugar for 10 minutes, then let it steep off the heat another 20 minutes. Strain. This keeps refrigerated about 3 weeks.
  2. Thin honey 3 parts honey to 1 part warm water, stir until smooth. This is what keeps it from seizing in the cold drink.

2Build the drink

This is built in the glass over ice, the soda does structural work here, not just top-off, and it needs to go in last and per glass, not into a batch.

  1. Fill a tall glass with ice.
  2. Add 3/4 oz (22 ml) ginger syrup, 3/4 oz (22 ml) fresh lemon juice, 1/2 oz (15 ml) fresh lime juice, and 1/4 oz (7 ml) thinned honey syrup.
  3. Add 3 to 4 drops of a 20% saline solution (20 g salt to 80 g water).
  4. Stir once, top with 4 to 5 oz (120 to 150 ml) soda water.
  5. Slap a mint sprig once against the back of your hand to open the oil, then drop it on top. Don't crush it.

Notes

No pineapple, kiwi, tomato, or capsaicin anywhere in this build, and the ginger bite here is the honest, capsaicin-free substitute for heat. Trace alcohol declared: zero, built entirely from scratch, no NA spirits, no bitters, no extract. Optional texture note: 1 tbsp aquafaba dry-shaken with the syrup and citrus before building gives a light foam, if aquafaba is used note it's a chickpea product, nothing on file against it for this household but worth naming on the spec regardless.
