The mythology on this one is a line of shaker boys passing one tin down the row through Carnival, twelve minutes of theater. The reality is that the emulsion needs time and shear, not a floor show, and I can get you there without a chorus line behind the bar. This is the hardest drink on this list to make properly, and it's worth doing properly, that egg white and cream have to fully emulsify or you've made a gin drink with some foam on it instead of the drink Ramos built.

How it's made

1Dry shake, then the long shake

The dry shake, with no ice, is what actually builds the foam, the ice comes later strictly for chilling and dilution. This is the one drink on this list where I tell you to shake longer than feels reasonable, the emulsion is not done at ten seconds no matter how tired your arm is.

  1. Combine 1.5 oz (45 ml) gin, 0.5 oz (15 ml) fresh lemon juice, 0.5 oz (15 ml) fresh lime juice, 0.75 oz (22 ml) simple syrup, 1 oz (30 ml) heavy cream, 1 pasteurized egg white (or 2 tbsp aquafaba, see notes), and 3 drops orange flower water in a shaker, no ice.
  2. Dry shake hard for about 30 seconds to build the foam.
  3. Add ice and shake hard and long, 45 to 60 seconds. This is longer than any other shaken drink on this list and it's not optional.

2Strain, rest, raise the head

The foam needs a minute to set before it can hold the soda's lift. Pour the soda in wrong and you collapse everything you just built in the shaker.

  1. Fine strain into a chilled collins glass. No ice.
  2. Let it rest 1 to 2 minutes so the foam sets.
  3. Pour 1.5 oz (45 ml) soda water into the drink through the middle of the foam, slowly, to raise the head without breaking it.

Notes

No pineapple, kiwi, tomato, or capsaicin. Contains dairy and egg, nothing here rules either out. My default for anything she could touch is pasteurized egg white or aquafaba, which is what's written into this spec above. For anyone else in the house, standard fresh raw egg white is fine. Orange flower water is measured in drops on purpose, a quarter teaspoon of it ruins the drink outright, it reads as perfume instead of aroma.
