Ingredients
- 1¾–2 lbs baby beef ribs
Basting sauce: - 3 Tbsp oil - 3 Tbsp chili sauce - 2 Tbsp lemon juice - dash black pepper - dash dry mustard
Method
Conventional method: Wipe ribs with a wet towel/damp paper towels. Place in a single layer in a shallow roasting pan. Roast at 450°F about 20 minutes, turning once. Mix basting sauce. Remove ribs from oven, brush with sauce on both sides, return to oven. Bake at 450°F about 20 minutes longer until tender, basting occasionally with remaining sauce. If ribs darken too fast, cover with foil and reduce heat to 400°F for the last 10 minutes.
Prep time 15 min, bake time 45–50 min, oven 450°F then 400°F.
Tip: the basting sauce also works for chicken or turkey legs or ground meat patties; for higher flavor, add 2 Tbsp red wine to the sauce if desired.
Serving suggestion: baked potatoes or chips, buttered broccoli, tossed green salad.
Microwave method (back of card): Add 1 sliced onion and 1/2 cup water to a microwave-safe baking dish with the ribs. Microwave covered at MEDIUM HIGH about 10 minutes, turning dish once; drain juices, remove onions, turn ribs, brush with basting sauce. Microwave uncovered at HIGH for at least 10 minutes, turning/basting every 3 minutes. Rearrange ribs (least-cooked pieces toward dish edges). Microwave 2–3 more minutes at HIGH. Let stand before serving. Total microwave time 22 minutes at HIGH 100%/MEDIUM HIGH 70%.
Note: fat and bone affect cooking evenness — meat nearest the bone cooks first; well-marbled meat cooks more evenly than lean meat.
