Summary

A no-cook, make-ahead black bean and corn salsa/salad meant to chill for hours before serving with corn chips — a good pull for a party-appetizer request that needs zero stove time.

Ingredients

  • 2 (15 oz) cans black beans, drained
  • 1 (15 oz) can diced Mexican-style tomatoes, drained
  • 1 (11 oz) can whole kernel corn, drained
  • 1 (7 oz) can chopped green chilies, drained
  • 1/4 to 1/2 cup fresh cilantro (optional)
  • 1/4 cup chopped green onions
  • 1/2 cup salsa
  • 2 tbsp lime juice
  • 2 tbsp red wine vinegar
  • 1 1/2 tbsp olive oil
  • 1/8 tsp Tabasco sauce

Method

  1. Combine black beans, tomatoes, corn, green chilies, cilantro, and green onions in a large bowl. (The card carries fraction marks — "1/3" and "2/3" — next to the green onions that appear to split the onions between two mixing steps; the exact split is not clear from the handwriting and is transcribed as-is, not resolved.)
  2. Add the salsa, lime juice, vinegar, oil, and Tabasco sauce; toss to mix.
  3. Chill covered for 3 to 10 hours.
  4. Serve with corn chips.

Notes on the artifact

Two-sided handwritten card on a decorative blue/purple/gold-border Hallmark Cards, Inc. template. Card title reads "Recipe For Black Bean Toss," with "Salsa" handwritten above the title line as an added alternate name. "Time required," "Serves," and "From" fields are all left blank.
