Ingredients
- 2 packages (10 oz each) frozen cut broccoli
- 2 cups cooked rice
- 6 Tbsp butter or margarine
- 2 cups fresh bread crumbs (about 2.5 slices)
- 1 medium onion, chopped
- 3 Tbsp all-purpose flour
- 1 tsp salt
- 1/4 tsp pepper
- 3 cups milk
- 1.5 lbs fully cooked ham, cubed
- shredded cheddar or Swiss cheese
Method
Cook broccoli per package directions, drain. Spoon rice into a 13x9x2-inch baking pan, top with broccoli. Melt butter in a skillet; toss 2 Tbsp of the melted butter with the bread crumbs and set aside. Sauté onion in remaining butter until soft. Add flour, salt, pepper, stir until bubbly. Stir in milk, cook until sauce thickens and bubbles; cook/stir 1 minute. Add ham, heat through. Pour sauce over rice and broccoli. Sprinkle crumbs over all. Bake at 350°F for 30 minutes or until heated through. Sprinkle with cheese; let stand 5 minutes before serving.
