Chicken-Spinach Phyllo Rolls

Ingredients

Filling: - 1 5-oz. can chunk-style chicken, drained and broken up - 1 cup shredded cheddar cheese (4 oz.) - 1 10-oz. package frozen chopped spinach, thawed and well drained - 1/2 of an 8-oz. tub cream cheese with chives and onion - 1/2 cup chopped walnuts - 1 Tbsp dry sherry - 1/2 tsp Worcestershire sauce - 1/4 tsp ground nutmeg

Assembly: - 8 sheets phyllo dough, thawed - 1/3 cup margarine or butter, melted

Method

  1. For the filling, combine chicken, cheddar cheese, spinach, cream cheese, walnuts, sherry, Worcestershire sauce and nutmeg in a large mixing bowl. Set aside.
  2. Lightly brush 1 sheet of phyllo with melted margarine/butter; place another sheet on top and brush again. (Cover remaining phyllo with a damp cloth to prevent drying.)
  3. Spoon one-fourth of the filling (about 1/2 cup) evenly down the long side of the phyllo, about 2 inches from the long side and 1 inch from the short side. Fold 2 inches of the long side over the filling; fold in the short sides. Loosely roll up jelly-roll style from the long side. Place seam side down on an ungreased baking sheet. Repeat with remaining phyllo, butter, and filling. (May cover and chill up to 6 hours.)
  4. Brush tops with any remaining margarine/butter. Score rolls at 1 1/2-inch intervals with a sharp knife. Bake in a 400°F oven about 15 minutes or until golden brown. Let stand 5 minutes before slicing. Serve warm.
