Summary

Ingredients
- 1 large egg
- 2 egg whites
- 1/4 cup skim milk
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 8 one-inch-thick diagonally cut slices French or Italian bread
- cinnamon sugar and reduced-calorie maple syrup (optional, for serving)
Method
- Whisk egg and egg whites until foamy; add milk, vanilla, cinnamon, and nutmeg.
- Preheat oven to 200°F. Spray a skillet with nonstick cooking spray. Dip 4 bread slices in the egg mixture.
- Cook in the skillet until golden, about 1–2 minutes per side.
- Transfer to a plate and keep warm in the oven; repeat with remaining slices, respraying skillet as needed.
- Divide among plates, sprinkle with cinnamon sugar, top with syrup, and serve immediately.
Preparation 10 minutes, cooking 10 minutes. Serves 4.
Variation (puffy French toast): Prepare the egg mixture in a large shallow glass dish, add bread slices turning to coat, cover and refrigerate overnight, then cook and serve as directed.

Cook's Tips: Any type of bread works (cinnamon-raisin or whole-wheat suggested), or use all-fruit preserves as a topping. A wire whisk gives the smoothest, most whipped egg mixture.
