Topping: 1/4 cup tomato ketchup, 1/2 tsp prepared mustard, 2 tsp brown sugar, fresh herbs (optional garnish).
Conventional method: Combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard; mix until blended. Add ground beef, mix gently but thoroughly. Line a 9x5-inch loaf pan with foil, press in beef mixture. Combine topping ingredients and spread over meat loaf. Bake at 400°F for 35-45 minutes or until done. Drain fat; rest 5 minutes before serving; garnish with fresh herbs. Prep time 15 min.
Microwave method (back of card): Same mix; form into a 9-inch ring on a microsafe dish, cover with waxed paper. Microwave HIGH 5 min, pour off juices. Microwave covered at MEDIUM ~10 min. Remove waxed paper, spread topping. Microwave uncovered HIGH ~5 min more or until done. Serve with noodles or rice and a green salad. Total microwave time ~20 min (HIGH 100%/MEDIUM 50%).
