What it is
A no-boil vegetable lasagna in an 11 × 7 dish.
Makes 6 servings · 6 POINTS · oven 375°F · covered 1 hour, then uncovered 5 minutes · stand 5 minutes.
1 jar (28 oz) spaghetti sauce · 6 uncooked lasagna noodles · 1 container (15 oz) fat-free ricotta · 1–2 cups sliced or chopped raw vegetables (mushrooms, broccoli, bell pepper) · 1 package (8 oz) shredded low-fat mozzarella.
Layering: ⅓ sauce · 3 noodles · ⅓ sauce · all the ricotta and vegetables · ½ the mozzarella · remaining noodles · remaining sauce. Foil on, bake an hour, then the rest of the mozzarella uncovered for 5.
