Mom's Homemade Apple Cider (Non-Alcoholic)

Signed at the bottom right — reads as "C. Strzoka." ⚠ The surname spelling is not certain from the signature. Worth confirming with the family — a signed recipe is the best kind of attribution there is, and it would be a shame to publish the name wrong.
Ingredients
- 8–10 apples, chopped & quartered (no need to remove peel or seeds)
- water — enough to cover the apples
- ½ – 1 cup sugar, to taste
- cinnamon & allspice, wrapped in cheesecloth
Method
In large stock pot add apples & fill w/ water — just enough to cover apples.
Add ½ – 1 cup sugar to taste.
Boil on high for 1 hr. — add cinnamon & allspice wrapped in cheesecloth.
Turn down heat & simmer for 2 hrs. — covered.
Take off heat after 2 hrs. of simmering & let sit & cool, removing spice and mashing up apples to a pulp like consistency (a potato masher works well for this).
Once cool, pour into a strainer over a bowl.
When most of the juice has drained away from apples, put remainder of pulp into a doubled-up cheesecloth & squeeze over bowl until no more juice comes out.
Keeping
Store in air tight container in fridge for up to 1 wk. Can also be frozen for longer.
Reheat either in microwave or on stove top & enjoy.
