What it is
"This Italian-inspired, meal-in-a-pot is rich in fiber-filled ingredients… especially if you use leftover pasta."
Everything into one saucepan, simmer 10 minutes if the pasta is already cooked, or until dry pasta is done, topping up with water to keep the pasta just covered.
1 (16 oz) can Italian-style crushed or whole tomatoes, finely chopped · 1 (19 oz) can kidney or cannellini beans, rinsed and drained · 1 cup frozen mixed vegetables · 3 cups cooked pasta or ¾ cup dry · 3 cups water.
Makes 4 servings, 3 POINTS. Serve with Parmesan, bread and a salad.
Notes
Filed to Printed\ on the folder test.
The oldest of the three Weight Watchers cards in this batch (1999, against two Week 9 cards from
2000), and from a different card format — so the household had program material across at least two
seasons. See parmesan-chicken-cutlets-weight-watchers for the note on what that records.
The genuinely useful idea, and the reason a card like this survives in a box, is the leftover-pasta premise: it is written to be made from what is already in the fridge rather than from a shopping list.
Not transcribed verbatim in full, per the standing call on printed material.
