Raspberry-Topped Lemon Pie

Ingredients

  • 1½ cup Raspberries (sugar to taste)
  • 1 Tbsp. Cornstarch
  • 3 Egg Yolks
  • 1 (14 oz) can Eagle Brand Sweetened Condensed Milk (not evaporated)
  • ½ cup Lemon Juice
  • Yellow Food Coloring, optional
  • 1 (6 oz.) Packaged Graham Cracker Crumb Pie Crust
  • Whipped Topping — ⚠ no quantity stated (finish)

Method

Preheat oven to 325°F.

In small saucepan, combine raspberries and cornstarch; cook and stir until thickened and clear.

In medium bowl, beat egg yolks; stir in sweetened condensed milk, lemon juice and food coloring, if desired. Pour into crust; bake 30 minutse (spelled as written).

Spoon raspberry mixture evenly over top. Chill 4 hours or unil set (spelled as written). Spread with whipped cream.

Notes

Complete card — temperature, both times, and the chill all stated.

"(not evaporated)" is the most useful thing on this card and the writer knew it. Sweetened condensed and evaporated milk sit next to each other on the shelf in near-identical cans, and substituting one makes a pie that never sets. The parenthesis is a warning written by someone who had either made that mistake or watched somebody else make it. It is preserved exactly.

An Eagle Brand promotional recipe copied by hand — the brand is named in the ingredient line, which is how Borden wrote them.

Two small misspellings, "minutse" and "unil", are kept as written; both are obvious slips of a moving pencil, not ambiguities.

The last line runs onto the bottom edge of page 2 and is partially clipped, but reads clearly as "Spread with whipped cream."

Note the small inconsistency in the card itself: the ingredient list says Whipped Topping (the tub), the final line says whipped cream. Both are recorded as written rather than harmonised.
