Swiss Chicken Cutlets (Healthy Meals in Minutes card)

What it is

Chicken cutlets rolled around half a slice of reduced-fat Swiss, tied, browned, then simmered in broth and white wine.

Serves 4 · prep 10 min · cook 13–15 min.

2 thin slices reduced-fat Swiss cheese (about 2 oz) · 4 chicken cutlets (4 oz each, ¼ inch thick) · 2 Tbsp flour · ½ tsp black pepper · 1 Tbsp unsalted butter or margarine · ½ cup reduced-sodium chicken broth · ¼ cup dry white wine (or more broth) · ¼ tsp dried oregano · parsley and oregano sprigs to garnish.

Halve each cheese slice, one half per cutlet, roll jelly-roll style from a short end, tie with string. Dredge in the peppered flour. Brown ~3 minutes. Add broth, wine and oregano, boil, then simmer 10–12 minutes. Remove the string before serving.

Per serving as printed: 223 cal (30% from fat), 4 g carb, 32 g protein, 178 mg sodium, 7 g fat, 84 mg chol.
