Ingredients
- 4 c. zucchini, grated
- 1 t. salt
- ¼ c. oil
- ⅛ t. pepper
- ⅛ t. garlic powder
- 1 c. Bisquick (I use 3 cheese Bisquick) — the cook's own aside, in the margin
- 4 eggs
- ½ med. onion, chopped
- 1 c. shredded cheddar cheese
- ½ c. bacon bits — optional
Method
Salt zucchini and let stand 45 min. Drain well.
Mix all ingredients, reserving a little cheese to sprinkle on top.
Bake in greased 8 × 11 or similar pan at 400° for 15 min and then at 350° for 30 min.
Notes
Complete card — both temperatures, both times, the pan size, and the drain step all present.
"(I use 3 cheese Bisquick)" is the writer speaking in their own voice about their own substitution, and it is kept exactly where they put it. That parenthesis is the difference between a recipe and a record of how someone actually cooked.
The 45-minute salt-and-drain is the step that makes this work rather than flood, and the card puts it first for that reason.
The right edge of page 1 is very slightly cropped on the Bisquick line, but the aside is readable in full.
Filed under both side and main — four eggs and a cup of cheese put it on either side of that line
depending on the meal.
