Belize Beach Stew Chicken

Recado rojo, overnight marinade, fall off the bone

This is the chicken from the beach in Belize, dark and deep and sliding off the bone. The recado rojo is pura cocina yucateca, achiote and spice woken up in bitter orange, and the chicken sleeps in it overnight because lo bueno no se apura. The pot itself carries no heat at all; the fire comes to the table per person.

How it's made

1Tonight: wake the recado and marinate

Toasting the chile and warming the paste in the citrus blooms the achiote instead of leaving it dusty and flat, and the overnight rest lets the salt and recado season the meat to the bone. The marinade is a wet rub, not a soak, so massage it in with your hands.

  1. Tear the stem and seeds out of the guajillo, tear it flat, and toast it in a dry skillet 30 seconds per side until it smells like raisins. Do not let it blacken.
  2. Soak the toasted chile in hot water 10 minutes until soft, then chop it fine, almost a paste.
  3. In a bowl, crumble half the achiote block (about 2 tablespoons). Add the juice of the orange and 2 limes, and mash with a fork until smooth, no lumps.
  4. Stir in the chopped chile, 4 cloves of garlic grated fine, the vinegar, Worcestershire, oregano, cumin, allspice, black pepper, and the tablespoon of salt.
  5. Set aside 2 tablespoons of this marinade in a covered cup in the fridge. That spoonful goes in fresh tomorrow.
  6. Pat the chicken pieces dry and massage the rest of the marinade into every piece with your hands, under the skin where you can. Cover and refrigerate overnight. Even 2 or 3 hours helps if you cannot wait the night.

2Tomorrow: burn the sugar, brown the chicken

Caramelizing the sugar almost to burnt before the chicken goes in is the Belizean secret. That dark bittersweet stain is where the deep color and beach flavor live, not from any tomato.

  1. Take the chicken out of the fridge 30 minutes before cooking. Leave the marinade clinging to it.
  2. In a heavy pot or Dutch oven over medium heat, melt the coconut oil, then sprinkle in the brown sugar and let it bubble and darken to the color of coffee, about 1 to 2 minutes. It should smell toasty, one breath before burnt.
  3. Lay the chicken in skin side down, in two batches so the pot is never crowded. Brown 4 minutes per side. The pieces will turn deep mahogany from the sugar and achiote. Set them on a plate as they finish.

3The stew

A covered pot at a bare simmer, low and slow, melts the collagen in the thighs and drumsticks. That is what fall off the bone means. A hard boil makes tough chicken; lazy bubbles make tender.

  1. In the same pot, cook the sliced onion in the drippings 4 minutes, scraping up the dark bits from the bottom.
  2. Add the last 2 cloves of garlic, chopped, and the reserved 2 tablespoons of fresh marinade. Stir 1 minute until it smells alive.
  3. Pour in the chicken stock and add the bay leaves. Nestle the chicken back in with all its juices; the liquid should come about two thirds up the pieces.
  4. Bring just to a simmer, then drop the heat to low and cover. Simmer tapado about 50 minutes, turning the pieces once halfway.
  5. Uncover and check: the meat should give way at a nudge from a spoon. If not, cover and give it 10 more minutes.
  6. Taste the gravy, add salt if it needs it, and simmer uncovered 5 to 10 minutes to thicken it enough to coat a spoon. Squeeze in the last lime at the end.

4The heat, per person

The pot stays mild always. The mild plate takes no heat and that rule is firm, so the fire is added at the plate, never stirred in.

  1. Mild plate: straight from the pot, nothing added. Keep that serving spoon away from any salsa.
  2. Medium plate: a small bowl of moderate salsa on the side. Chop half the habanero (or a whole serrano for gentler), seeds removed, with a little minced onion, lime juice, and a pinch of salt. A spoonful over the chicken, not in the pot.
  3. Hot plate: the rest of the habanero, seeds and all, minced with onion, lime, and salt, or just the bottle of Marie Sharp's like on the beach.

5Serve it like Belize

  1. Pile the chicken over the yellow rice and spoon the dark gravy generously over both.
  2. The bright slaw goes right beside it on the plate, its acid cuts the rich gravy.
  3. Optional garnish for whoever wants it: a little chopped cilantro at the table only, never in the dish.
