Flattop Chicken & Charred Vegetable Rice Bowl
Pounded thighs seared hard, vegetables charred not steamed, a lemon-yogurt sauce doing the flavor work instead of heat
A fast, filling weeknight dinner on a flattop griddle. Thighs plus egg plus a Greek-yogurt sauce land around 35-40g protein a serving without a dry breast doing the work, two-plus vegetable servings charred hard so they taste ordered not endured, and real rice. Flavor comes from char, garlic and lemon, never heat: the shared bowl is built capsaicin-free, and hot sauce goes on the table for whoever wants it, per plate.
How it's made

Pounding the thighs even is the smash move: it gets you a fast, even sear instead of a scorched outside over a raw center.
- Pound chicken thighs to an even 1/2-inch between plastic wrap; toss with olive oil, salt, pepper and garlic powder.
- Dice 2 zucchini, 1 red bell pepper and 1 small red onion into similar-sized pieces; toss with 12 oz broccoli florets, olive oil, salt and pepper.
- Whisk the sauce: 8 oz Greek yogurt, juice and zest of 1 lemon, 1 grated garlic clove, a glug of olive oil, black pepper, chopped parsley, pinch of salt.
2On the Flattop
Set three heat zones: one screaming hot, one medium-high, one medium, so protein, vegetables and rice each get what they need at once.
- Hot zone: chicken down, don't touch for 4-5 minutes (let the crust form), flip, 4-5 more, pull at 165F internal.
- Medium-high zone, same time: vegetables in a thin layer, not piled, or they steam instead of char. Toss every 2 minutes, 8-10 minutes total, to real char with some bite left.
- Medium zone: melt a knob of butter, break in the rice, add 2 minced garlic cloves, press flat to pick up crispy bits, push aside, scramble in the eggs, fold together, finish with a splash of soy.
- Rest the chicken 5 minutes, then slice. Build: rice, charred vegetables, sliced chicken, a dollop of lemon-yogurt sauce, parsley over everything. Hot sauce stays in the bottle on the table, hot plate only.
