Flattop Chicken Yakitori Skewers with Sesame-Ginger Soba Salad
Skewered chicken thigh lacquered on the griddle, cold soba tossed in sesame-ginger dressing, charred scallion, blistered edamame, quick-pickled daikon
This one's a real left turn -- out of the rice bowl, out of the lettuce boat, off the plated-protein-with-pan-sauce format, into skewers over a cold noodle salad. It's also the one closest to my own kitchen: the flavor base is soy, mirin, ginger, garlic, no chile anywhere near it, which means the no-heat rule isn't a workaround here, it's just how the dish is built. My grandparents' pickle crock is where quick pickles like the daikon here started for me, this one's a fast vinegar version, not the real ferment, but same instinct. No seafood, no mushrooms, no cooked carrot in the shared food, no tomatoes, no cilantro needed anywhere in it. Heat, if anyone wants it, stays in its own bottle at the table, hot plate only.
How it's made
1Prep (about 15 min)
The soba gets a cold-water rinse the second it's drained, not a rest in its own hot water. That stops the cooking on contact and washes the surface starch off the noodle, which is what keeps a cold noodle salad loose instead of clumping into a gummy brick by the time it hits the table.
- Soak bamboo skewers in water, at least 15-20 minutes.
- Quick pickle: slice daikon into thin rounds or matchsticks, toss with 3 tbsp rice vinegar, 1 tsp sugar, 1/2 tsp salt. Set aside -- 20 minutes minimum, longer is fine.
- Boil soba in salted water per package time (usually 4-5 min), drain, and immediately rinse and toss under cold running water until fully cool. Toss with a few drops of sesame oil so it doesn't stick, set aside.
- Cut chicken thighs into 1-1.5 inch cubes, thread onto skewers, season with salt and pepper.
- Glaze: whisk 1/4 cup soy sauce, 2 tbsp mirin, 1 tbsp honey, 2 cloves garlic minced, 1 tbsp grated ginger, squeeze of lime. Split into two bowls -- one stays clean for dressing the noodles, the other goes to the griddle for basting raw chicken and never crosses back.
- Shred cabbage thin. Slice half the scallions on the bias for garnish; keep the other half whole for charring.
2On the Flattop (about 18 min)
Basting the glaze on at the end, instead of marinating the raw chicken in it, is why it lacquers instead of burns -- sugar over direct high heat scorches fast, so it goes on in the last few minutes when the meat's mostly cooked and there's less time for it to catch.
- Hot zone: skewers down, undisturbed 3 minutes, flip, brush with the basting glaze. Continue flipping and basting every minute or two, 6-8 minutes total, until 165F and the glaze has tightened into a sticky coat, not a puddle.
- Medium zone, same time: whole scallions down, 2-3 minutes, turning once, until blistered and charred in spots. Pull, slice.
- Medium zone: frozen edamame straight onto the griddle with a little oil, salt, pepper, tossed 4-5 minutes until blistered and hot through.
- Cool edge of the griddle: shredded cabbage flashed 30 seconds, just enough to soften the raw edge without wilting it -- pull it before it goes limp.
- Plate: soba tossed with the reserved clean glaze as the base, cabbage over, edamame and charred scallion scattered on, skewers on top, daikon pickle over the top, sesame seeds to finish. Heat or chili crisp stays in its own bottle at the table -- hot plate only, though this one has no capsaicin built into it either way.
