A leaner, faster take on the charred-vegetable rice bowl, swapping in shrimp for a high-protein plate at a lower fat load in a third of the cook time. Note: this one contains shellfish (not for a seafood-free table). Built capsaicin-free for the shared bowl, heat at the table. The smoked paprika is smoke, not heat, with no capsaicin.

Dry shrimp is the whole trick: wet shrimp hits the hot flattop and steams instead of searing, so you lose the crust before you get it.

  1. Dice 2 zucchini, 1 red bell pepper and 1 small red onion into similar-sized pieces; toss with 12 oz broccoli florets, olive oil, salt and pepper.
  2. Whisk the sauce: 8 oz Greek yogurt, juice and zest of 1 lemon, 1 grated garlic clove, a glug of olive oil, black pepper, chopped parsley, pinch of salt.
  3. Pat the shrimp bone-dry, then toss with olive oil, minced garlic, smoked paprika, salt and black pepper.

2On the Flattop

Shrimp is almost all muscle with little fat to protect it, so the window between done and rubber is short: everything else goes first, shrimp last and fast.

  1. Medium-high zone: vegetables in a thin layer, toss every 2 minutes, 8-10 minutes to real char with bite.
  2. Medium zone: butter, broken-up rice, minced garlic, press flat for crispy bits, push aside, scramble in the eggs, fold, splash of soy.
  3. Hot zone, last: shrimp in a single layer, don't move them, 90 seconds a side. Pull the moment they turn opaque and curl into a loose C; a tight curl means overdone.
  4. Build: rice, charred vegetables, shrimp, lemon-yogurt sauce, parsley. Hot sauce on the table, hot plate only.
