Flattop Pork Medallions with Apple-Dijon Pan Sauce

A plated dinner, not a bowl and not a wrap -- the fourth different shape this kitchen's put on a flattop griddle in one night. Lean pork tenderloin, real deglazing for the sauce, beans griddled instead of just warmed, and carrots left raw on purpose. Built around a real set of constraints: no chicken, no seafood, no mushrooms, no cooked carrot in the shared food, and no capsaicin anywhere in it -- heat goes on the table in its own bottle, hot plate only.

How it's made

Carrots stay raw here on purpose -- cooking breaks down their cell walls and softens the very crunch that's the point of putting them on this plate, and it's also the version this table actually wants. Dressing them right before serving, not earlier, is what keeps them crisp instead of weeping into a soggy pile.

  1. Slice pork tenderloin crosswise into 1.5-inch medallions, pound lightly to an even 3/4 inch. Season with salt, pepper, garlic powder.
  2. Cut broccoli into small florets, zucchini into half-moons. Toss both with olive oil, salt, pepper.
  3. Drain and rinse the cannellini beans.
  4. Peel carrots into ribbons or matchsticks. Keep raw -- toss with lemon juice and a pinch of salt right before serving.
  5. Dice the apple small.

2On the Flattop

Deglazing is the whole trick behind the sauce: the browned bits stuck to the iron after searing the pork (the fond) are concentrated flavor, and it's the vinegar's acidity that lifts them back off the surface and into an actual sauce instead of leaving them behind to burn.

  1. Medium-high zone: broccoli and zucchini spread thin, tossed every couple minutes, 8-10 minutes to real char with some bite left.
  2. Medium zone, same time: olive oil and minced garlic, beans in, left undisturbed a minute or two so the edges blister and crisp. Pile spinach on top, it wilts in under a minute, toss together, finish with lemon.
  3. Hot zone: pork medallions down, don't move them, 2.5-3 minutes a side to 145F internal. Pull and rest.
  4. Same hot zone, off direct flame: butter, diced apple, a splash of apple cider vinegar, a spoonful of dijon, scrape the griddle as it bubbles. One to two minutes until the apple softens and the sauce loosens up.
  5. Plate: beans and spinach as the base, pork fanned over top, pan sauce spooned over the pork, charred broccoli and zucchini alongside, raw carrot ribbons over or on the side. Hot sauce or chili crisp stays in its bottle on the table -- hot plate only.
