The smash is what a flattop griddle is for, and this is a genuinely different plate from a rice bowl: lettuce-wrapped patties, crispy smashed potatoes, jammy caramelized onion and mushroom, and a pickle-yogurt sauce standing in for classic burger sauce. 93% lean turkey smashed thin gets real char and about 30g protein a serving without leaning on added fat. Built with no heat in the shared food; hot sauce goes on the table, hot plate only.

How it's made

Par-cooking and drying the potatoes lets them crisp instead of steam on the griddle; leaving the turkey in loose balls is the point, you smash them thin on contact.

  1. Dice potatoes into 1-inch pieces, microwave covered with a splash of water 5-6 minutes to just fork-tender, drain and let steam off a minute (dry surface = crisp).
  2. Shred cabbage thin (or use the bag), toss with a splash of vinegar, olive oil, salt and pepper; set aside to wilt slightly.
  3. Slice the onion and mushrooms.
  4. Sauce: yogurt, 1 tbsp Dijon, 2 tbsp chopped pickles, a grated garlic clove, black pepper, a splash of pickle brine.
  5. Divide turkey into 5-6 loose balls, do not pre-flatten; season the outsides with salt, pepper, garlic powder, onion powder.

2On the Flattop

Smashing lean turkey thin maximizes contact with the hottest part of the griddle, so you get a deep crust in under 3 minutes before the center overcooks, which is exactly the failure mode lean turkey usually has.

  1. Medium zone: onion and mushroom with a little oil, 10-12 minutes to deeply browned and jammy (caramelization, not sauteing).
  2. Medium-high zone: potatoes oiled and cut-side down, pressed flat, 4-5 minutes a side, don't move until they release on their own.
  3. Hot zone, last 6 minutes: turkey balls down, smash hard and flat immediately. 2-3 minutes undisturbed, flip, add cheese now if using, 1-2 minutes more.
  4. Build: lettuce leaf, patty, spoon of caramelized onion-mushroom, a pickle slice, sauce over the top. Potatoes and slaw on the side. Hot sauce stays in the bottle on the table, hot plate only.
