Taco Night — Full Meal Plan

This is the piece most recipes skip. Knowing what to cook in what order is what separates a home cook who gets everything to the table hot at the same time from one who's still pressing tortillas while the meat gets cold.

How it's made

1The Night Before

The marinade needs time. A 2-hour minimum marinade on flank steak is acceptable. Overnight is noticeably better — the acid from the citrus works through the full thickness of the steak and the chile flavor penetrates deeper.

  1. Toast, rehydrate, and blend the guajillo marinade (see Carne Asada recipe).
  2. Coat the flank steak completely. Cover and refrigerate.
  3. That's it for tonight.

2Day Of — 90 Minutes Before Eating

The salsas can sit at room temperature for hours and actually improve slightly as flavors meld. Make them first so you're not rushing.

  1. Make Salsa Roja: char tomatoes, jalapeño, onion, garlic → blend. Done. Set aside.
  2. Make Salsa Verde: char tomatillos, jalapeño, garlic → blend. Done. Set aside.
  3. Mix your tortilla dough (corn, flour, or both) and let it rest covered — 20–30 minutes.
  4. Pull the steak from the fridge. Let it come toward room temperature — 20–30 minutes on the counter. Cold meat straight to a hot stone drops the surface temperature and slows the crust.

330 Minutes Before Eating

Make guacamole last of all the salsas — it oxidizes faster than anything else on the table.

  1. Make guacamole. Cover tightly with plastic pressed directly on the surface.
  2. Set out toppings: cotija, crema, raw diced white onion, cilantro, lime wedges.
  3. Get the flat stone or cast iron ripping hot.

4Cook Sequence

Cook the meat first, rest it while you do the tortillas, then chop. Everything lands on the table together.

  1. Cook carne asada: high heat, 3–4 minutes per side. Pull and rest on a cutting board — do not cut yet.
  2. Immediately put onion rounds and pepper strips on the hot stone. They'll char while the meat rests.
  3. While the meat rests (5 minutes) and the onions char: press and cook tortillas on the same stone. Move quickly — tortillas take 1.5 minutes each.
  4. After 5 minutes rest, cut the steak against the grain, then chop into taco-sized pieces.
  5. Everything should be ready at the same time.

5Assembly — The Right Order

The order of toppings on a taco matters. Heavy wet things on top of lighter things compress and sog everything out.

  1. Start with two corn tortillas stacked (or one flour) — the double stack on corn is traditional, keeps them from tearing.
  2. Meat first, directly on the tortilla.
  3. Salsa — either roja or verde, your call. Not both on the same taco — too much liquid.
  4. Raw white onion and fresh cilantro.
  5. A crumble of cotija.
  6. A small drizzle of crema.
  7. Squeeze of fresh lime over everything — this is the finish, not optional.
  8. Guacamole on the side or a spoonful on top.
