Yucatán Night — Full Meal Plan

Yucatán is one of Mexico's most distinct regional cuisines — achiote, bitter orange, banana leaves, habanero. Nothing on this menu tastes like the taco table most people know. The pork does most of its work while you sleep or do other things. The rest of the meal comes together in the last hour.

How it's made

1The Night Before

The achiote marinade needs 12+ hours to penetrate a thick pork shoulder. Start this Saturday night for Sunday dinner, or Sunday morning for Sunday evening.

  1. Make the achiote marinade and score + coat the pork (see Cochinita Pibil recipe).
  2. Cover and refrigerate overnight.
  3. Optional: soak black beans overnight in cold water (reduces cooking time by 30 minutes).

2Morning of the Cook — 7–8 Hours Before Eating

The pork goes on the smoker early. Everything else happens later. This is the low-effort part — set it and let it work.

  1. Fire up the smoker to 225–250°F with applewood or orange wood.
  2. Prepare banana leaves and wrap the pork (see Cochinita Pibil recipe). Wrap in foil over the leaves.
  3. Place on smoker. Set a timer for 6 hours. Walk away.
  4. Internal target: 200–205°F. Check at 6 hours — it may need 1–2 more depending on your smoker and the size of the shoulder.

32 Hours Before Eating

Start the beans now — they need 1.5–2 hours on the stovetop (35 minutes if using a pressure cooker). Everything else is faster.

  1. Start the black beans (see Yucatecan Black Beans recipe).
  2. Make the pickled red onions — they need at least 30 minutes to pickle. Make them now so they're ready. (See Pickled Red Onions recipe.)
  3. Make the xni-pec salsa. Set aside. (See Xni-Pec recipe.)

430 Minutes Before Eating

Final preparations while the pork finishes its rest.

  1. Pull the pork from the smoker. Let it rest in the sealed package for 20–30 minutes — do not rush this. The juices redistribute.
  2. Mix your corn tortilla dough and let it rest.
  3. Check the beans — taste, adjust salt, add lard to finish.
  4. Set out toppings: pickled red onions, xni-pec, cilantro, lime wedges.

5Final 15 Minutes — Cook and Assemble

Tortillas fresh off the heat are the final piece. Press and cook them while someone else pulls the pork.

  1. Open the banana leaf package over a tray. Collect all juices. Pull the pork and toss with its juices.
  2. Press and cook corn tortillas on your flat stone or cast iron — high heat, 1.5 minutes each (same method as the corn tortilla card).
  3. Everything lands on the table at the same time.

6Assembly — Yucatán Style

Cochinita pibil tacos are simpler than carne asada tacos — fewer toppings, each one doing a specific job.

  1. Two corn tortillas stacked.
  2. A generous scoop of cochinita pibil — with its juices.
  3. Pickled red onions on top — don't skip these, they're essential.
  4. A small spoonful of xni-pec on the side or on top if you want heat.
  5. Fresh cilantro.
  6. Squeeze of lime.
  7. Serve the black beans in a bowl alongside with their broth and a drizzle of crema.
